Kobe beef is a certification rather than a style: Tajima cattle raised in Hyogo, graded for marbling, with only around three thousand head qualifying in a year. Restaurants serving the real thing display the certification mark and the individual cattle number, and plenty of places sell ordinary wagyu under the name. Lunch teppanyaki sets cost a fraction of dinner.
