Yatai Food Stalls, Fukuoka Overview
Around a hundred licensed stalls are wheeled onto the pavement each evening and taken away the same night, roughly forty percent of all the yatai in Japan. Cash only, seven or eight stools, no toilets, and you eat and move on rather than settle in. Worth knowing before planning an evening around it: the food is overwhelmingly pork, since Hakata ramen is a pork-bone broth.
