Juju dhau means king of yoghurts, and Bhaktapur has made it for long enough that the town is known for it across Nepal. Buffalo milk is boiled down with sugar and set in unglazed clay pots, which draw out the moisture and leave it thick enough to hold a spoon upright. Shops around Taumadhi and Durbar Square sell it by the pot. Eat it there rather than carrying it; the clay is the point.
